chocolate and a cup of java cake


'Chocolate and a Cup of Java Cake '
1 c. of sugar
1 1/8 c. all-purpose flour
1/2 c. unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1 egg
1 tsp. vanilla extract (& a few drops of almond extract)
1 c. of cold, STRONG, brewed coffee

Preheat oven to 350. Grease and flour an 8" pan.
Sift together flour, cocoa, baking soda and salt. Set aside.

In a med. bowl, cream butter and sugar until light & fluffy.
 Add egg and vanilla & almond and beat well.
Add flour mixture, alternating with coffee until mixed well.

Bake at 350 for 35-40 min. or until toothpick comes out clean.
Top with fresh whipped cream and berries
or frost with favorite icing!
 
This was Greg's birthday cake from Saturday.
We've been eating on it since then...
I highly recommend it if you want to make a quick,
 chocolately home-made cake!

  1. Oh dear... I just finished my dessert - a bowl of yogurt with a drizzle of maple syrup, suddenly it doesn't feel quite right :)

    Happy belated birthday, Greg! How's your leg healing? (Your sailboat is calling...)
    That cake. Is it a bundt cake? It looks dense and heavy and heavenly.
    And the recipe calls for strong coffee. You know I've got that!
    I must make one...

    1. Yes, the key is to make it a STRONG cup of coffee so you can taste it. :)
